  • 3 ripe bananas, sliced lengthwise
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 ripe banana, mashed

Method
 

  1. Preheat your oven to 350°F. Grease a 9-inch round cake pan.
  2. Melt 1/2 cup butter and stir in brown sugar until smooth. Pour into the cake pan and spread evenly.
  3. Place sliced bananas over the brown sugar mixture in a single layer.
  4. In a medium bowl, whisk together flour, baking powder, and salt.
  5. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and mashed banana.
  6. Alternate adding the dry ingredients and milk to the batter, mixing just until combined.
  7. Spread the batter over the bananas and bake for 40–45 minutes, or until a toothpick comes out clean.
  8. Cool for 10 minutes, then carefully invert the cake onto a serving plate. Serve warm.

Notes

Use ripe bananas for the sweetest flavor and avoid overmixing the batter to keep the cake soft and fluffy. Let the cake cool for 10 minutes before flipping and run a knife around the edges to help release it cleanly. Delicious served warm with whipped cream or vanilla ice cream.
