Ingredients
  

  • 4 slices sourdough bread (or Texas toast)
  • 3 tbsp butter, softened
  • 1 cup sharp cheddar cheese, shredded
  • 0.5 cup mozzarella cheese, shredded
  • 0.5 cup dill pickle chips, patted dry

Method
 

  1. Spread softened butter on one side of each slice of bread. The buttered side will be the outside of the sandwich.
  2. Heat a large non-stick skillet or griddle over medium-low heat.
  3. Place two slices of bread buttered-side down on a cutting board. Top with shredded cheddar and mozzarella, then layer dill pickle chips evenly over the cheese. Top with the remaining bread slices, buttered-side up.
  4. Place the sandwiches in the preheated skillet. Cook for 3–4 minutes until the bottom is golden brown and crispy.
  5. Carefully flip each sandwich using a spatula. Cook for another 3–4 minutes until the second side is golden brown and the cheese is fully melted.
  6. Remove from heat and let rest for 1 minute before slicing. Cut in half diagonally and serve warm.

Notes

Pat pickle slices dry with a paper towel to prevent soggy bread. Use medium-low heat — too high will burn bread before cheese melts. Shred your own cheese for better melting (pre-shredded has anti-caking agents). Butter the bread all the way to the edges for even browning. Cover the skillet with a lid for the last minute to help cheese melt faster.
