- Spread softened butter on one side of each slice of bread. The buttered side will be the outside of the sandwich.
- Heat a large non-stick skillet or griddle over medium-low heat.
- Place two slices of bread buttered-side down on a cutting board. Top with shredded cheddar and mozzarella, then layer dill pickle chips evenly over the cheese. Top with the remaining bread slices, buttered-side up.
- Place the sandwiches in the preheated skillet. Cook for 3–4 minutes until the bottom is golden brown and crispy.
- Carefully flip each sandwich using a spatula. Cook for another 3–4 minutes until the second side is golden brown and the cheese is fully melted.
- Remove from heat and let rest for 1 minute before slicing. Cut in half diagonally and serve warm.
Notes
Pat pickle slices dry with a paper towel to prevent soggy bread. Use medium-low heat — too high will burn bread before cheese melts. Shred your own cheese for better melting (pre-shredded has anti-caking agents). Butter the bread all the way to the edges for even browning. Cover the skillet with a lid for the last minute to help cheese melt faster.
