Ingredients
  

  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/4 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup toasted pecans or walnuts
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • salt and black pepper to taste

Method
 

  1. Wash and thoroughly dry the mixed greens, then place them in a large salad bowl.
  2. Slice the peaches into thin wedges and add them to the bowl along with the blueberries.
  3. Add the thinly sliced red onion to the salad.
  4. Sprinkle crumbled feta cheese and toasted nuts over the top.
  5. In a small bowl, whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper.
  6. Drizzle the dressing over the salad just before serving.
  7. Gently toss everything together until evenly coated and serve immediately.

Notes

Use ripe but firm peaches for best texture. Toast nuts to enhance flavor and crunch. Add dressing just before serving to keep greens crisp. Thinly slice onions for a milder taste. Chill ingredients beforehand for extra freshness.
