Ingredients
  

  • 4 large croissants, sliced in half
  • 4 large eggs
  • 4 slices bacon or sausage patties
  • 4 slices cheddar, Swiss, or American cheese
  • 2 tbsp butter
  • salt and black pepper to taste
  • sliced avocado (optional)
  • tomato slices (optional)
  • spinach or arugula (optional)
  • hot sauce or honey drizzle (optional)

Method
 

  1. Cook bacon or sausage in a skillet over medium heat until fully cooked. Set aside.
  2. In the same pan, melt butter and scramble the eggs gently until soft and fluffy. Season with salt and pepper.
  3. Slice croissants in half and lightly toast them if desired.
  4. Place a slice of cheese on the bottom half of each croissant.
  5. Add scrambled eggs evenly on top of the cheese.
  6. Layer with cooked bacon or sausage.
  7. Add any optional toppings, then place the top half of the croissant on each sandwich.
  8. Serve warm and enjoy immediately.

Notes

Do not overcook the eggs—soft eggs create the best texture. Warm croissants slightly before assembling. Place cheese under hot eggs to help it melt evenly. Wrap sandwiches in foil to keep warm if serving a group. Let hot ingredients cool slightly before assembling to avoid sogginess.
