Ingredients
  

  • 12 oz penne or rotini pasta
  • 2 cups cooked chicken breast, diced or shredded
  • 3 cups romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/3 cup grated Parmesan cheese
  • 3/4 cup Caesar dressing
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • black pepper to taste
  • 1 cup croutons
  • extra Parmesan for garnish

Method
 

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool completely.
  2. In a large bowl, combine the cooled pasta and cooked chicken.
  3. Add chopped romaine lettuce, cherry tomatoes (if using), and grated Parmesan cheese.
  4. In a small bowl, mix Caesar dressing with lemon juice, garlic powder, and black pepper.
  5. Pour the dressing over the pasta mixture and toss until evenly coated.
  6. Add croutons just before serving to keep them crisp.
  7. Garnish with extra Parmesan and serve chilled or slightly cool.

Notes

For best results, let the pasta cool completely before mixing to keep the lettuce crisp. Add croutons just before serving to maintain crunch. If making ahead, keep dressing separate and toss before serving. Add extra dressing if needed after chilling.
