Ingredients
  

  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked rice (white, brown, or basmati)
  • 1 cup chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill (or 1 tsp dried)
  • salt to taste

Method
 

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Coat the chicken and marinate for at least 20 minutes.
  2. Cook chicken in a skillet or grill over medium-high heat for 5–7 minutes per side until fully cooked.
  3. Let the chicken rest, then slice into strips.
  4. In a bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, and salt. Mix well and chill until ready to use.
  5. Assemble bowls with a base of rice and chopped romaine lettuce.
  6. Add sliced chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
  7. Drizzle generously with tzatziki sauce and serve.

Notes

Use chicken thighs for juicier results. Marinate the chicken for deeper flavor. Be sure to squeeze excess water from the cucumber for a thick tzatziki sauce. Store components separately for best freshness.
