- In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Coat the chicken and marinate for at least 20 minutes.
- Cook chicken in a skillet or grill over medium-high heat for 5–7 minutes per side until fully cooked.
- Let the chicken rest, then slice into strips.
- In a bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, and salt. Mix well and chill until ready to use.
- Assemble bowls with a base of rice and chopped romaine lettuce.
- Add sliced chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
- Drizzle generously with tzatziki sauce and serve.
Notes
Use chicken thighs for juicier results. Marinate the chicken for deeper flavor. Be sure to squeeze excess water from the cucumber for a thick tzatziki sauce. Store components separately for best freshness.
