  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup maple syrup
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 apples, peeled and diced
  • 1/4 cup chopped pecans or walnuts (optional)

Method
 

  1. Preheat your oven to 350°F and lightly grease an 8x8-inch baking dish.
  2. In a large bowl, combine oats, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together eggs, milk, maple syrup, melted butter, and vanilla extract.
  4. Stir the wet ingredients into the oat mixture until fully combined. Fold in the diced apples.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Sprinkle chopped nuts and extra cinnamon over the top if desired.
  7. Bake for 35 to 40 minutes until golden brown and set in the center.
