Ingredients
  

  • 12 oz pasta (penne, fettuccine, or spaghetti)
  • 1 tbsp salt
  • 5.2 oz Boursin cheese (garlic & fine herbs)
  • 1 cup heavy cream
  • 1/2 cup reserved pasta water
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved (optional)
  • 2 cups fresh spinach (optional)
  • grilled chicken or shrimp (optional)
  • fresh parsley, chopped (for garnish)
  • grated Parmesan cheese (for garnish)

Method
 

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic for about 1 minute.
  3. Add heavy cream and bring to a gentle simmer.
  4. Stir in the Boursin cheese until fully melted and smooth.
  5. Add cooked pasta and a splash of reserved pasta water. Toss until well coated.
  6. Stir in optional tomatoes and spinach until wilted.
  7. Adjust consistency with more pasta water if needed.
  8. Serve warm with parsley and Parmesan on top.

Notes

Reserve pasta water to adjust the sauce consistency. Stir continuously when melting the cheese to keep the sauce smooth. Avoid overheating to prevent separation. Best served fresh, but leftovers can be reheated gently with added cream or milk.
