Ingredients
  

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 12 oz penne or fettuccine
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 14 oz crushed tomatoes (1 can)
  • 0.5 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp red pepper flakes (optional)
  • fresh basil or parsley (optional garnish)
  • extra Parmesan cheese (optional garnish)

Method
 

  1. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
  3. In the same pan, sauté minced garlic for about 30 seconds until fragrant.
  4. Add crushed tomatoes and Italian seasoning, stirring to combine. Let simmer for 5 minutes.
  5. Pour in heavy cream and stir until the sauce becomes smooth and creamy.
  6. Add Parmesan cheese and stir until melted and fully incorporated.
  7. Return the cooked chicken to the pan, then add the drained pasta. Toss everything together, adding reserved pasta water as needed to loosen the sauce.
  8. Garnish with fresh basil or parsley and extra Parmesan cheese before serving.

Notes

Cook pasta al dente for best texture. Use freshly grated Parmesan for smooth melting. Let the sauce simmer to deepen flavor. Add reserved pasta water gradually to adjust consistency. Taste and adjust seasoning before serving.
