Ingredients
  

  • 6 cups chopped romaine lettuce
  • 1 1/2 cups fresh strawberries, sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup sliced almonds (or pecans)
  • 1/2 cup croutons
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • salt and pepper to taste

Method
 

  1. Wash and chop the romaine lettuce, then place it in a large bowl.
  2. Slice the strawberries and add them to the bowl.
  3. Sprinkle crumbled feta cheese over the salad.
  4. Add sliced almonds and croutons for crunch.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, honey, and Dijon mustard.
  6. Pour the dressing over the salad just before serving.
  7. Toss gently until everything is evenly coated and serve immediately.

Notes

Use ripe strawberries for best flavor. Add dressing just before serving to keep the salad crisp. Toast nuts for extra flavor. Adjust sweetness of dressing to taste. Store components separately for best freshness.
