Ingredients
  

  • 2 large cucumbers, sliced
  • 0.75 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • 1 tsp honey
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup red onion, thinly sliced (optional)
  • 0.5 cup cherry tomatoes, halved (optional)
  • 2 tbsp fresh parsley or dill (optional)

Method
 

  1. Slice cucumbers into thin rounds or half-moons and place in a large bowl.
  2. Add crumbled feta cheese on top of the cucumbers.
  3. In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), and honey.
  4. Add oregano, salt, and black pepper to the dressing and mix well.
  5. Pour the dressing over the cucumber and feta mixture.
  6. Toss gently until everything is evenly coated.
  7. Add optional ingredients if desired and serve immediately or chill before serving.

Notes

Use English cucumbers for fewer seeds and better texture. Pat cucumbers dry to prevent excess water. Add feta just before serving for the best texture, and chill the salad for 15–20 minutes to enhance flavor. Slice onions very thin for a milder taste.
