Ingredients
  

  • 8 small flour or corn tortillas
  • 6 large eggs
  • 2 tbsp milk
  • 1 tbsp butter
  • salt to taste
  • black pepper to taste
  • 6 slices bacon, cooked and crumbled (or 1/2 lb sausage or diced ham)
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • salsa or hot sauce to serve

Method
 

  1. Warm the tortillas in a skillet or microwave until soft and pliable.
  2. In a bowl, whisk together eggs, milk, salt, and black pepper until well combined.
  3. Melt butter in a skillet over medium heat. Add the eggs and cook, stirring gently, until soft and fluffy.
  4. Cook your chosen protein (bacon, sausage, or ham) if not already prepared.
  5. Assemble tacos by adding scrambled eggs evenly into each tortilla.
  6. Top with cooked protein, shredded cheese, and desired toppings like tomatoes, onion, cilantro, and avocado.
  7. Serve immediately with salsa or hot sauce.

Notes

Cook eggs over medium-low heat for the best soft texture. Warm tortillas just before serving to prevent cracking. Prep toppings in advance for faster assembly. You can customize with different proteins, veggies, or dairy-free options.
