Ingredients
  

  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 tbsp butter or olive oil
  • 1 cup cooked shredded chicken (optional)
  • 1/2 cup black beans (optional)
  • 1/2 cup diced bell peppers (optional)
  • 1/4 cup sliced green onions (optional)
  • 1 tsp taco seasoning (optional)
  • salsa for serving
  • sour cream for serving
  • guacamole for serving
  • fresh cilantro for garnish

Method
 

  1. Heat a large skillet over medium heat and lightly grease with butter or oil.
  2. Place one tortilla in the skillet and sprinkle half with cheese and optional fillings.
  3. Fold the tortilla in half and cook for 2–3 minutes until golden brown underneath.
  4. Carefully flip and cook the other side until crispy and the cheese is melted.
  5. Remove from the skillet and let rest for 1 minute before slicing.
  6. Repeat with remaining tortillas and fillings.
  7. Serve warm with salsa, sour cream, or guacamole.

Notes

Use freshly shredded cheese for smoother melting and cook over medium heat to avoid burning the tortillas. Don’t overfill the quesadillas to keep them crispy and easy to flip. A cast-iron skillet gives the best golden texture. Let quesadillas rest briefly before slicing so the fillings stay inside.
