Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded Monterey Jack or mozzarella cheese
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, diced
  • 2 tbsp red onion, finely chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1/4 tsp salt

Method
 

  1. Preheat your grill or skillet to medium-high heat.
  2. Rub chicken with olive oil, garlic powder, paprika, salt, and pepper.
  3. Grill chicken for 5–7 minutes per side until fully cooked.
  4. In a bowl, mix tomatoes, red onion, cilantro, lime juice, and salt.
  5. During the last 2 minutes of cooking, sprinkle cheese over chicken and let it melt.
  6. Remove chicken from heat and let it rest briefly.
  7. Top each piece with avocado slices and fresh tomato mixture before serving.

Notes

Pound chicken evenly for consistent cooking. Use ripe but firm avocados for best texture. Let the chicken rest after cooking to retain juices. Add a squeeze of fresh lime before serving for extra brightness.
