- In a skillet over medium heat, cook bacon until crispy. Transfer to a paper towel-lined plate. Drain most of the grease, leaving a thin layer.
- In the same skillet, crack the eggs and cook to your preference (fried, scrambled, or over-easy). Season with salt and pepper. Remove and set aside.
- Spread softened butter on one side of each bread slice (the outside of the sandwich).
- Place one slice of bread buttered-side down on a clean surface. Layer with one slice of cheddar cheese, the cooked eggs, bacon (or ham), shredded mozzarella, and the second slice of cheddar cheese. Top with the second slice of bread, buttered-side up.
- Heat the same skillet over medium-low heat. Place the sandwich in the skillet. Cook for 3-4 minutes until golden brown and crispy. Carefully flip and cook for another 3-4 minutes until the second side is golden and the cheese is melted.
- Remove from skillet. Let rest for 1 minute, then slice in half diagonally. Serve warm.
Notes
Use medium-low heat to prevent burning before cheese melts. Butter the bread all the way to the edges for even browning. Press down gently with a spatula for better contact. Shred your own cheese for better melting. Let the sandwich rest for 1 minute before slicing.
