Ingredients
  

  • 2 lbs boneless skinless chicken breasts, cubed
  • 1/2 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1/2 tsp crushed red pepper flakes
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • red onion chunks (optional)
  • bell peppers (optional)
  • mushrooms (optional)

Equipment

Method
 

  1. In a bowl, mix melted butter, garlic, Dijon mustard, lemon juice, and all seasonings until well combined.
  2. Reserve a small portion of the sauce for brushing later.
  3. Add chicken cubes to the remaining sauce and toss to coat evenly. Marinate for at least 30 minutes.
  4. Preheat grill to medium-high heat (about 400°F).
  5. Thread chicken and vegetables onto skewers.
  6. Grill for 10–15 minutes, turning occasionally, until chicken is fully cooked.
  7. Brush with reserved cowboy butter during the last few minutes of cooking.
  8. Remove from grill, let rest briefly, and serve warm.

Notes

Use fresh garlic and herbs for the best flavor. Reserve some sauce for brushing during cooking to enhance flavor. Cut chicken evenly for consistent cooking. Avoid overcooking to keep chicken juicy. Soak wooden skewers before grilling. Let chicken rest a few minutes before serving.
