- While the chicken cooks, combine mangoes, red onion, cilantro, lime juice, jalapeño, and salt in a bowl and mix gently.
- Let the chicken rest for a few minutes after cooking.
- Top each chicken breast with mango salsa and serve.
Notes
Use ripe but firm mangoes for best texture. Marinate the chicken longer (up to 2 hours) for deeper flavor. Let the chicken rest after cooking to retain juiciness. Salsa is best served fresh but can be refrigerated for up to 2 days.
