  • 3 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 ripe mangoes, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1/2 jalapeño, finely diced (optional)
  • 1/4 tsp salt

Method
 

  1. In a bowl, whisk together honey, lime juice, olive oil, garlic, chili powder, salt, and pepper.
  2. Place chicken in a shallow dish and coat well with the marinade. Let it sit for 15–30 minutes.
  3. Preheat grill or skillet over medium-high heat.
  4. Cook chicken for 5–7 minutes per side, or until fully cooked and juices run clear.
  5. While the chicken cooks, combine mangoes, red onion, cilantro, lime juice, jalapeño, and salt in a bowl and mix gently.
  6. Let the chicken rest for a few minutes after cooking.
  7. Top each chicken breast with mango salsa and serve.

Notes

Use ripe but firm mangoes for best texture. Marinate the chicken longer (up to 2 hours) for deeper flavor. Let the chicken rest after cooking to retain juiciness. Salsa is best served fresh but can be refrigerated for up to 2 days.
