- In a large bowl, whisk together olive oil, lemon juice, garlic, soy sauce, honey, and spices.
- Add the chicken cubes and toss until fully coated. Cover and refrigerate for at least 30 minutes or up to 8 hours.
- Preheat grill to medium-high heat (about 400°F).
- Thread chicken and vegetables onto skewers, alternating pieces evenly.
- Place skewers on the grill and cook for 10–15 minutes, turning every few minutes.
- Cook until chicken is fully done and lightly charred on the edges.
- Remove from grill and let rest for a few minutes before serving.
Notes
Soak wooden skewers in water for 20–30 minutes to prevent burning. Cut chicken into even-sized pieces for consistent cooking. Avoid overcrowding skewers for even heat circulation.
