  • 2 lbs boneless skinless chicken breasts, cubed
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 1 tsp salt

Method
 

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, soy sauce, honey, and spices.
  2. Add the chicken cubes and toss until fully coated. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  3. Preheat grill to medium-high heat (about 400°F).
  4. Thread chicken and vegetables onto skewers, alternating pieces evenly.
  5. Place skewers on the grill and cook for 10–15 minutes, turning every few minutes.
  6. Cook until chicken is fully done and lightly charred on the edges.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

Soak wooden skewers in water for 20–30 minutes to prevent burning. Cut chicken into even-sized pieces for consistent cooking. Avoid overcrowding skewers for even heat circulation. Marinate longer for deeper flavor. Use a meat thermometer (165°F internal temp) for perfect doneness. Lightly oil grill grates to prevent sticking.
