Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, cold and cubed
  • 3 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 375°F and line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, combine flour, sugar, and salt. Cut in cold butter until the mixture is crumbly.
  3. Press two-thirds of the mixture into the bottom of the pan to form the crust.
  4. Bake for 12–15 minutes until lightly golden.
  5. In another bowl, mix blueberries, sugar, cornstarch, lemon zest, lemon juice, and vanilla extract.
  6. Spread the filling evenly over the crust.
  7. Sprinkle the remaining crumb mixture over the top.
  8. Bake for 35–40 minutes until golden and bubbly. Cool completely before slicing.

Notes

Use fresh lemon juice and zest for the best flavor. Keep butter cold for a crumbly texture. Pre-bake the crust to prevent sogginess. Let bars cool completely before slicing to help the filling set. Frozen blueberries can be used without thawing.
