- Preheat oven to 375°F and line an 8x8-inch baking pan with parchment paper.
- In a bowl, combine flour, sugar, and salt. Cut in cold butter until the mixture is crumbly.
- Press two-thirds of the mixture into the bottom of the pan to form the crust.
- Bake for 12–15 minutes until lightly golden.
- In another bowl, mix blueberries, sugar, cornstarch, lemon zest, lemon juice, and vanilla extract.
- Spread the filling evenly over the crust.
- Sprinkle the remaining crumb mixture over the top.
- Bake for 35–40 minutes until golden and bubbly. Cool completely before slicing.
Notes
Use fresh lemon juice and zest for the best flavor. Keep butter cold for a crumbly texture. Pre-bake the crust to prevent sogginess. Let bars cool completely before slicing to help the filling set. Frozen blueberries can be used without thawing.
