Ingredients

  • 4 large croissants
  • 6 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage
  • 1/4 cup diced green onions
  • extra cheese for topping (optional)
  • chopped parsley for garnish (optional)
  • hot sauce for serving (optional)

Equipment

  • baking sheet
  • parchment paper
  • mixing bowl
  • skillet
  • whisk

Method

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Slice each croissant open lengthwise without cutting all the way through. Place on the prepared baking sheet.
  3. In a bowl, whisk together eggs, milk, salt, and black pepper.
  4. Melt butter in a skillet over medium heat and scramble the eggs until just set.
  5. Fill each croissant with scrambled eggs, bacon, sausage, shredded cheese, and green onions.
  6. Sprinkle extra cheese on top if desired.
  7. Bake for 8–10 minutes until the croissants are warm and the cheese is melted.
  8. Garnish with parsley or hot sauce before serving.

Notes

Use large bakery-style croissants for the best texture and avoid overcooking the eggs before baking. Prepare the fillings ahead of time for quicker assembly. Freshly shredded cheese melts more smoothly and helps create the perfect gooey filling.
