- In a saucepan, combine sugar and water over medium heat. Stir until the sugar fully dissolves, then let cool.
- Add the sliced peaches, lemon juice, and optional zest to a blender or food processor.
- Pour in the cooled sugar syrup and blend until completely smooth.
- Taste and adjust sweetness if needed.
- Chill the mixture in the refrigerator for 1–2 hours until cold.
- Pour into an ice cream maker and churn according to manufacturer instructions.
- Transfer to a container and freeze for 2–3 hours until firm.
- Scoop and serve chilled.
Notes
For best results, use fully ripe peaches for maximum sweetness and flavor. Chill the mixture thoroughly before churning to achieve a smoother texture. If you don’t have an ice cream maker, stir the mixture every 30 minutes while freezing to reduce ice crystals.
