  • 2 lbs boneless skinless chicken breasts, cubed
  • 1/3 cup ranch dressing
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • cherry tomatoes (optional)
  • zucchini slices (optional)
  • red onion chunks (optional)

Equipment

  • mixing bowl
  • spoon or whisk
  • grill or oven or air fryer
  • skewers wooden or metal
  • tongs
  • meat thermometer optional

Method

  1. In a large bowl, mix ranch dressing, Parmesan, garlic, olive oil, and spices until well combined.
  2. Add chicken cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Preheat grill to medium heat (375–400°F) or prepare oven or air fryer.
  4. Thread marinated chicken onto skewers, adding vegetables if using.
  5. Grill skewers for 10–15 minutes, turning occasionally until fully cooked.
  6. Brush with extra ranch or sprinkle Parmesan during the last few minutes for added flavor.
  7. Remove from heat, let rest briefly, and serve warm.

Notes

Marinate up to 8 hours for deeper flavor. Use freshly grated Parmesan for best texture and taste. Avoid overcrowding skewers for even cooking. Turn skewers regularly to prevent burning. Use a thermometer to reach 165°F internal temperature. Lightly oil grill grates to prevent sticking.
