  • 1 lb smoked sausage (sliced into 1-inch pieces)
  • 2 cups baby potatoes (halved)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 red onion (cut into chunks)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • fresh parsley (optional, chopped)
  • grated Parmesan cheese (optional)

Method
 

  1. Preheat your oven to 400°F and line a large sheet pan with parchment paper.
  2. Add the potatoes to the pan, drizzle with 1 tablespoon olive oil, and season lightly with salt and pepper.
  3. Roast the potatoes for 10 minutes.
  4. Remove the pan from the oven and add the sausage, bell peppers, zucchini, and red onion.
  5. Drizzle remaining olive oil and sprinkle garlic powder, paprika, Italian seasoning, salt, and pepper. Toss everything to coat evenly.
  6. Spread everything into an even layer on the pan.
  7. Return to the oven and roast for 20–25 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
  8. Garnish with fresh parsley or grated Parmesan if desired, then serve.
