  • 1 cup canned coconut milk
  • 2 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 tbsp maple syrup or honey
  • 1 tsp lemon juice
  • sliced strawberries (optional topping)
  • toasted coconut flakes (optional topping)
  • granola (optional topping)
  • fresh mint (optional topping)

Method
 

  1. In a bowl or jar, whisk together chia seeds, coconut milk, maple syrup, and vanilla extract.
  2. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  3. Cover and refrigerate for at least 2 hours or overnight until thickened.
  4. In a small bowl, mash strawberries with maple syrup and lemon juice until slightly chunky.
  5. Spoon the strawberry mixture over the chilled chia pudding.
  6. Add your favorite toppings and serve cold.

Notes

Stir the pudding twice during the first 10 minutes to prevent clumping. Use full-fat coconut milk for a richer texture. Adjust sweetness to taste and let it chill overnight for best results. Add a splash of milk before serving if it thickens too much.
