Method
- Preheat oven to 375°F and line an 8x8-inch baking pan with parchment paper.
- In a bowl, mix flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Press two-thirds of the mixture into the pan to form the crust.
- Bake crust for 12–15 minutes until lightly golden.
- In another bowl, toss strawberries with sugar, cornstarch, lemon juice, and vanilla extract.
- Spread strawberry filling evenly over the crust.
- Sprinkle remaining crumble mixture on top.
- Bake for 35–40 minutes until top is golden and filling is bubbling. Cool completely before slicing.
Notes
Use cold butter for the best crumb texture. Pre-bake the crust to avoid sogginess. Let bars cool completely before slicing for clean edges. Fresh strawberries are ideal, but frozen (thawed and drained) work too. Adjust sugar based on fruit sweetness.
