Ingredients
  

  • 3 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 8 oz mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 24 ladyfinger cookies
  • 1 cup strawberry juice or puree

Method
 

  1. In a bowl, combine sliced strawberries, sugar, and lemon juice. Let sit for 15–20 minutes until juicy.
  2. Blend half of the strawberry mixture to create a light syrup for dipping.
  3. In a large bowl, whip heavy cream until soft peaks form.
  4. In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth.
  5. Gently fold whipped cream into the mascarpone mixture until creamy.
  6. Quickly dip each ladyfinger into the strawberry syrup and arrange in a single layer.
  7. Spread a layer of mascarpone cream, then add sliced strawberries.
  8. Repeat layers and finish with cream and extra strawberries on top. Chill for at least 4 hours before serving.

Notes

Do not soak ladyfingers too long to avoid soggy layers. Use cold heavy cream for better whipping results. Chill overnight for best flavor and texture. Slice strawberries evenly for a neat presentation. You can substitute mascarpone with cream cheese or use mixed berries for variation.
