  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping, thawed
  • 3 oz berry-flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • extra whipped topping for garnish
  • fresh mixed berries for garnish
  • crushed cookies for garnish

Method
 

  1. In a medium bowl, combine the crushed golden sandwich cookies and melted butter until evenly coated. Press the mixture firmly into the bottom of a 9x13-inch dish. Refrigerate for 15 minutes to set.
  2. Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in the whipped topping until fully combined.
  3. Spread the cream cheese mixture evenly over the chilled crust using a spatula.
  4. In a separate bowl, whisk the berry gelatin with boiling water until dissolved. Stir in the cold water and allow the mixture to cool slightly.
  5. Gently fold the sliced strawberries, blueberries, and raspberries into the gelatin mixture.
  6. Carefully pour the berry layer over the cream cheese layer, spreading evenly.
  7. Refrigerate the dessert for at least 4 hours or until fully set.
  8. Before serving, top with extra whipped topping, fresh berries, and crushed cookie crumbs.

Notes

Allow the gelatin mixture to cool slightly before pouring over the cream cheese layer to keep the layers separate. Use room-temperature cream cheese for the smoothest texture.
