Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 3 tbsp olive oil
  • 1 1/2 tsp ground turmeric
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper

  • lemon wedges (optional garnish)
  • red pepper flakes (optional garnish)

Method
 

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Wash and dry the cauliflower florets well so they roast instead of steam.
  3. In a large bowl, toss the cauliflower with olive oil, turmeric, garlic powder, paprika, cumin, salt, and pepper.
  4. Spread the cauliflower in a single layer on the prepared baking sheet.
  5. Roast for 25–30 minutes, flipping halfway through cooking for even browning.
  6. Continue roasting until the edges are golden and slightly crispy.
  7. Remove from the oven and finish with fresh parsley or a squeeze of lemon juice if desired.

Notes

Dry the cauliflower thoroughly before roasting to achieve crispy caramelized edges. Avoid overcrowding the baking sheet and roast at high heat for the best texture. Add lemon juice after roasting for brighter flavor. You can customize this recipe with curry powder, smoked paprika, Parmesan cheese, or tahini sauce.
