Ingredients
  

  • 2 cups cooked, shredded chicken
  • 1 cup plain Greek yogurt
  • 0.5 cup grated cucumber (water squeezed out)
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried dill or 1 tbsp fresh dill
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup red onion, finely chopped (optional)
  • 0.25 cup cherry tomatoes, halved (optional)
  • 2 tbsp fresh parsley (optional)

Method
 

  1. In a bowl, combine Greek yogurt, grated cucumber, lemon juice, olive oil, and minced garlic.
  2. Add dill, salt, and black pepper, then mix until smooth and creamy.
  3. In a large bowl, add the shredded chicken.
  4. Pour the tzatziki dressing over the chicken and mix until well coated.
  5. Fold in red onion, cherry tomatoes, and parsley if using.
  6. Chill in the refrigerator for at least 30 minutes for best flavor.
  7. Serve cold and enjoy.

Notes

Be sure to squeeze excess moisture from the cucumber to prevent a watery salad. Use rotisserie chicken for a quick shortcut. Let the salad chill before serving to enhance the flavors. Adjust garlic and lemon juice to taste, and use full-fat Greek yogurt for a richer texture.
